From the coastal northeast US, I've never eaten any of these. I might try crawfish if it's anything like shrimp. but that's about it.

The fact that I recognize all these foods; except for Chitlins I’ve never heard of those

 

I’ve also tried all of these except for the Chitlins and fried alligator

Chitlins are just pig intestines.  If you've eaten offal before, this is really no different.  Personally, I feel my chitlins need to be heavily seasoned in order for me to enjoy them.

Fried alligator is divine.  Alligator in general is delicious.

Another vegetarian who says mostly no here. xD
Would go for the desserts though, but only in small quantities because fructose intolerance.

 

But on the issue of offal: If you kill the animal you better use all of it.

When it's a part of your culture, eating offal isn't bizarre.  In some areas, they make chitlins.  In my neck of the woods, they make chicharrones.  Personally, I don't care for pork rinds, but I have family that loves them.

I'd definitely eat the beignet and the berry chantilly cake. I might try the red beans and rice with sausage, although I don't really like most sausages. Probably wouldn't eat the boudin since the whole thing is apparently a sausage, just with rice in. I've never eaten any shellfish in my life, because since I have several anaphylactic allergies, my mum was always worried about giving me anything with shellfish since it's one of the major common allergens. And I'm not about to try it now just in case, so the boiled crawfish and seafood gumbo and po'boy are out. Even if I wasn't worried about that possible allergen aspect, seafood that still looks like... a creature... disturbs me. Shrimp look too much like a whole living being to me and they're basically sea bugs and that just grosses me out. Honesty I couldn't even bring myself to touch a shrimp without recoiling. And I don't think I could eat chitlins or alligator without involuntarily throwing up since I know what they are. 
 

I admittedly don't usually like trying new foods anyway. I'm not an adventurous eater and prefer having the same familiar things every day. But the cake and beignet sound... safe enough.

Same :) 

 

(took me a while to just get used to switching from Swiss cheese to white cheddar after my usual grocery store stopped selling the particular brand and packaging of Swiss I used to get; so I shopped around and found a different store chain that was still selling the latter and I do shop there occasionally now (but might have to give up on the Swiss cheese after getting a package from that store that I later found out was weeks past its "best by" date)

I relate to this so much.  I look at people's plates like...HOW.

I'm usually open to trying new food as long as it isn't anything that will make me sick or I know I can't stomach. I'm guessing this is Louisiana?

 

1: Tried it once and had an allergic reaction. If it weren't for that, I would have it again because I was enjoying it until my throat started to itch 😭

2: Had this often growing up, with and without sausage. I'd have it again.

3: Yes, it sounds interesting to try.

4: Absolutely not. I can't bring myself to eat organs that process waste. I'm grossed out by offal, even though it is in my culture (tripe, beef liver, gizzards) I've never been able to take more than a bite. Something about the taste, texture and knowing what they do, I can't.

5: Probably not. Like, I'd rather eat this than chitlins but I assume the seafood is a mix of shellfish? Fortunately I'm not severely allergic though I don't want to mess with it so I'd have to pass.

6: Again, shellfish allergy. Otherwise yes, I'd try it, though I'm not sure I'd like the combination. Maybe one with just the ham and beef?

7: Would definitely try it once out of curiosity.

8: I made these once! Not sure if I did them right but it was fun and I'd love to try the real thing. I don't usually have a lot of sweets but vacations are an exception.

9: Sounds delicious!

 

So I'd probably have more meat and desserts than my usual diet, be careful with the seafood, and take some ideas home - I don't eat a lot of meat but might try making different versions of the stuff I like.

The only one I'd be hesitant about are chitlins, but I'd try them if they were presented well and made by someone who was good at cooking them.

I said Yes to all the above! Apart from the pig intestines (which sounds kinda weird but still kinda good), everything else sounds really good!
