How to make scrambled pancakes (serves 1):

 

Mix together:

1/2 cup all-purpose flour

1 tbsp granulated sugar

1/2 tsp salt

1 tsp baking powder

 

Dig a well in the middle, then add:

1 egg, beaten

1/2 cup milk

1 tbsp vegetable oil

1/2 tsp vanilla

A spritz of lemon juice (optional)

 

Mix well to remove all lumps.

 

Pour all batter into the bottom of a hot pan, and wait for it to bubble/solidify.

 

Attempt to flip. Fail miserably.

 

Embrace the failure and pretend the pancake is an egg. Scramble it.

 

Serve in a bowl with any desired toppings (cinnamon, sugar, maple syrup, etc.)

That's how a number of my recipes evolved.

I just might do that.  We'll see if I can scramble up less of a disaster with that.

Things you dislike might be a little more personal.

 

On a related note, how do you feel about social media (outside of AVEN)? You don't strike me as the sort who uses it.

I have an active Facebook account and a less active twitter.
