That reminds me of "so, are you female agender or male agender?" Unless the school has really inclusive policies on trans once you get there, you end up right back in the box. Many steps have been taken both backwards and forwards across the ages. I hope that a more universal trend can be found, in which genders and lacks thereof can be accepted wholesale and loved unconditionally, regardless of a person's identity. However, I am not fooled into thinking that there will never be steps, or even leaps or sprints, backwards along the way; there have been many of those in the past, as you have pointed out, and I'm sure there will be some in the future too. It seems that this new Other gender option just treats the person as an organization, which also uses the same plural pronouns.
